WEEKLY RECIPE: CHOCOLATE PEANUT BUTTER PROTEIN CAKE!! Since my birthday is Saturday I have been on a mission to make a protein cake that tastes as good as a normal one without the calories and without the gluten… After a few questionable attempts I nailed it!!! Nutrition for one serving: Calories 124 Fat 3.7g Carb 8.2g Prot 17.1g INGREDIENTS for cake: – 1 scoop casein protein powder (I used #Dymatized Elite cinnamon roll because that’s the flavor I had in the house. Chocolate or vanilla would work also) – 1 scoop whey isolate protein (I used #Dymatized Elite rich chocolate) – 1/2 cup water – 1/3 cup eggwhites – 2 tablespoons milled flaxseed – 2 tablespoons unsweetened cocoa powder – 1/2 teaspoon vanilla extract – 2 tablespoons Stevia or Splenda – 1/4 teaspoon baking soda – just a pinch of cinnamon INGREDIENTS for frosting: – 6 tablespoons #Coolwhip lite – 3 tablespoons PB2 – 3 tablespoons Stevia or Splenda – 5 drops vanilla extract – optional.. add a little dab of nonfat Greek yogurt to give it a cream cheese frosting taste. 1. Gather the ingredients for the cake. 2. Mix the casein, flax and water first. Let it sit and thicken a few seconds. 3. Add the remaining cake ingredients and mix well. 4. Microwave full power in the bowl you mixed it (no need for oil). Time can range 2-3 minutes depending on the depth of the bowl. Keep an eye on it. 5. Allow it to cool completely, then flip it over on to a plate. ***if it is not cool the frosting will melt and slide off 6. Gather the ingredients for the frosting. 7. Mix them all together until the frosting has a smooth consistency. 8. Spread the frosting on the cake. Cut into 4 even pieces and enjoy!!!
